Making ribs today (Mother's Day) with the 3-2-1 method. 3 hours uncovered at 225, then wrap in foil and spritz with a 50/50 mix of apple cider vinegar and water, then back in for 2 hours, then unwrap and spritz again for one final hour. This is about 90 minutes in and I'm about to add the probe for the meat thermometer.
